A simulation-based performance investigation of downstream operations in the Indian Surimi Supply Chain using environmental value stream mapping

Abstract The consumption of surimi made from fish has begun to see a continuous rise in demand owing vast availability, low pricing and copious protein content. Despite visible improvements processing distribution trends Indian surimi, the downstream operations supply chain specific lacks performance due prolonged delays, extended waiting times diminishing quality. rising fossil fuel prices, associated emissions increased focus on energy utilization for organizational sustainability have this inefficiency concern. This indeed created room adjust existing design. work integrates principles lean carries out an environmental analysis observing water, raw materials along followed by identification elimination wastes. article aims eliciting identifying optimizing using Value Stream Mapping (VSM). VSM is used as tracking tool capture propose different alternatives. Performance was carried integration scenarios namely No vertical integration, Partial Complete value stream mapping discrete event simulation model developed. It observed that with complete would provide better comparison other design alternatives considered. will reduce 74.52% lead time, 79.68% 81.66% compared current state. Therefore, creating cleaner enhancement.
